Youth Digital has a wonderful collection of online coding courses including some for coding Java for Minecraft and modding in Minecraft. My son has really enjoyed his modding course and these are very professionally done.
Learn To Mod has a course on Learning to Mod in Minecraft with Java Script, and an additional Minecraft Modding course for young children who cannot type.
