Tomato and Garlic Zoodles




  1. Using a vegetable peeler or mandolin slicer, carefully peel zucchini into long, thin ribbons.
  2. In a large pot, cover zucchini with water and bring to a boil.
  3. Cook for about 2 minutes.
  4. Drain and set aside.
  5. In a large pan over medium heat, add olive oil.
  6. Once heated, add garlic cloves and stir until lightly brown. 
  7. Add tomatoes and stir for about 30 seconds.
  8. Add zucchini “zoodles” and stir for another 30 seconds.
  9. Season with salt and pepper.
