This chicken dish is a family favorite! My husband and I love the THM plan but what I really love is finding an on-plan meal that everyone in the family loves. This is our second favorite as a family. I think you’ll love it too! It’s super simple to make and uses staple items for people who are on plan. Even if you’re not doing the THM plan, you’ll love this meal too. It doesn’t use any special ingredients or sweeteners.
To make the Creamy Garlic Chicken Over Pasta (THM-S) I start by frying up 4-6 slices of bacon (or a pound if the family is home and will be snacking while I cook lol). Set the bacon aside and keep half of the grease in the skillet. I usually let the grease cool down just a bit before I add the garlic so it doesn’t burn quickly (it will make it bitter). Once cooled down, put it on medium heat and add 4-6 cloves of garlic (personal preference). After no more than 30 seconds (you don’t want it to turn brown) add one container of grape tomatoes (cut in half).
Let those simmer with the garlic for a minute and then add a cup of fresh spinach. I like to stir these three ingredients around for 2-3 minutes until the spinach is wilted nicely. Then add 1 cup of heavy whipping cream and ½ cup of powdered parmesan cheese. I don’t often use the powdered parmesan because we love fresh parmesan but for this recipe it works best. The fresh melts differently and causes the spinach and tomatoes to lump up and stick together.
Turn the heat to low, add some fresh cracked black pepper (I don’t add salt, the bacon grease provides enough for my taste) and let that simmer while you cook the chicken and pasta.
To cook the chicken I just season both sides with salt a pepper and toss it in the skillet with the rest of the bacon grease, a little olive oil and 1-2 tablespoons of butter. The butter helps it get that nice brown color. Sear both sides then turn it to low to let it cook through. Once cooked add it to the skillet of sauce and finish up the pasta.
I use Dreamfield pasta for this meal to keep it on plan. It truly tastes the same! Cook it according to the directions on the package, you don’t want to over cook this.
Once your pasta is done it’s time to plate and enjoy!! Crumble the bacon on top and serve.
This is so delicious and rich. If you’d rather not have pasta with it, a Caesar salad would go great with it! You could even toss it with zucchini noodles. Whatever your preference, it will not disappoint!
