Creamy Garlic Chicken over Pasta THM-S Meal

Ingredients

  • 46 Cloves garlic (minced with a garlic press)
  • 46 Slices bacon
  • 1 Pint Grape Tomatoes (halved)
  • 1 Cup Baby Spinach (Fresh)
  • 1 Cup Heavy Whipping Cream
  • 1/2 Cup Grated Parmesan (Powdered Form)
  • 6 Small Chicken Breasts
  • 1 Box Dreamfield Pasta
  • 1 Salt and Pepper to taste

Instructions

  1. To make this I start by frying up 4-6 slices of bacon.
  2. Set the bacon aside and keep half of the grease in the skillet.
  3. Let the grease cool down just a bit before adding the garlic.
  4. Once cooled down, put it on medium heat and add 4-6 cloves of garlic.
  5. After no more than 30 seconds (you don’t want it to turn brown) add one container of grape tomatoes (cut in half).
  6. Let those simmer with the garlic for a minute and then add a cup of fresh spinach.
  7. I like to stir these three ingredients around for 2-3 minutes until the spinach is wilted nicely.
  8. Then add 1 cup of heavy whipping cream and ½ cup of powdered parmesan cheese.
  9. Turn the heat to low, add some fresh cracked black pepper (I don’t add salt, the bacon grease provides enough for my taste) and let that simmer while you cook the chicken and pasta.
  10. To cook the chicken I just season both sides with salt and pepper and toss it in the skillet with the rest of the bacon grease, a little olive oil and 1-2 tablespoons of butter.
  11. Sear both sides then turn it to low to let it cook through.
  12. Once cooked add it to the skillet of sauce and finish up the pasta.
  13. Cook THM Approved pasta according to the directions on the package, you don’t want to over cook this.
  14. Once your pasta is done it’s time to plate and enjoy!! Crumble the bacon on top and serve.
