Ingredients

  • 2 Cups All Purpose Flour
  • 3/4 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 2 1/2 Teaspoons Pumpkin Spice Mix
  • 2 Large Eggs
  • 1 Can Pumpkin Puree ((15 ounces or almost two cups puree from a pie pumpkin))
  • 1/2 Cup Oil
  • 1 Tablespoon Milk
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Chocolate Chips

Instructions

  1. Preheat oven to 375° F.
  2. Line a muffin pan with paper liners, silicone baking cups or grease with nonstick spray.
  3. In a medium bowl, combine your dry ingredients and whisk thoroughly.
  4. In an another bowl, combine the oil, pumpkin puree, eggs, milk, and vanilla extract.
  5. Mix thoroughly.
  6. Add the wet mixture into the dry ingredients bowl and fold to combine.
  7. Stir in 1 cup chocolate chips.
  8. Using a scoop or 1/4 measuring cup, spoon the batter into the muffin pan.
  9. Sprinkle the tops with additional chocolate chips if desired, and bake for 22 minutes.
