Ingredients

  • 3 pounds Ground Beef
  • 3 jars Spaghetti Sauce (no sugar added brands)
  • 2 Tbsp Dried Oregano
  • 3/4 Tsp Mineral Salt
  • 2 Tsp Onion Powder
  • 2 Tsp Garlic Powder
  • 1/8 Tsp Cayenne Pepper
  • 1 Pkg Frozen Spinach (Thawed)
  • 1 1/2 Pkg Cream Cheese
  • 21 Ounces Cottage Cheese
  • 3 Large Eggs
  • 16 Ounces Mozzarella
  • 1/2 Cup Grated Parmesan (Fresh is best. For the top.)

Instructions

  1. I make everything the same way they recommend…I brown the meat, drain it, add the spices and the spaghetti sauces and let it simmer while I get everything else together.
  2. I thaw the spinach and squish out as much water as I possibly can between two paper towels. Ok, I probably end up using 10 paper towels for this. Lol Just get the water out. That is your mission.
  3. Blend the cream cheese, eggs & cottage cheese with freshly cracked black pepper…just because I love freshly cracked black pepper. If the thought of cottage cheese stopped you in your tracks, keep cooking mama, you won’t even notice it. I’m super picky and I hate cottage cheese, I promise, you won’t know it’s in there. Blend those ingredients until smooth.
  4. Now, it’s time to assemble but this time instead of putting it into a large baking dish you’re going to put it into mini loaf pans that you’ve sprayed with coconut oil spray. You can get them anywhere, sometimes with lids, sometimes without, either will do. Some like to wash and reuse them, you certainly can as this will pop right out but they’re pretty cheap so I just tend to buy new.
  5. I do two rounds of layering so it looks like this in each little loaf pan: 

    Meat Sauce (cover the bottom…one serving spoon full will do)

    Cottage Cheese Blend (3/4 serving spoon full)

    Spinach (sprinkle)

    Mozzarella Cheese (sprinkle…form a layer but not a thick layer)

    Repeat.

    Then I sprinkle Parmesan Cheese on top

  6. That’s it! So simple. I bake them all at once at 400 for 20 minutes. If some don’t brown nicely (often the ones at the front don’t in my oven) I leave those in and broil them for a minute or two until nicely browned on top.
  7. Once they have fully baked and are completely cooled, cover them and freeze them. When you’re ready to eat them take one out of the freezer. Pop it out of the foil. They pop out easily once they are frozen. Simply remove them from the foil onto the plate to reheat! I heat them for 4 minutes in my microwave. Enjoy!
