One of the most popular recipes in the new Trim Healthy Mama Cookbook is their Lazy Lasagna. You can see the original Lazy Lasagna recipe here. It is basically lasagna without the noodles! Instead of adding in squash or zucchini or some other hearty/thick veggie you simply add some spinach. This gives you your veggies but it actually doesn’t change the flavor of the lasagna like an eggplant would.
The fun thing is, you won’t even miss the pasta. No really. You won’t. I served it to my dad when he was in town visiting and he didn’t realize there weren’t noodles until I told him after he had finished it. It is that good…and apparently pasta is that bland lol.
That is one thing I keep learning over and over and over on this plan. The foods that I think I love and think I will miss actually aren’t that big of a deal after all. I’ve gone from saying an exasperated, “What!? No pasta?!?” to realizing contentedly…”Hmm…I don’t even miss it!”
The first time I made this my family all raved. Even our youngest two boys (3 & 5 at the time) love it and they can be quite picky. If you’re considering THM, a low-carb diet or even just trying to start cutting out some carbs here and there, this would be a great place to start! It is one of the very first meals I made from the cookbook and it is one that I now keep on hand constantly.
As soon as I start to run low, I make more. In fact, if you were to come to my house today and open my cookbook it would open right to the Lazy Lasagna page. My sister and brother-in-law recently started their own version of the THM lifestyle and this is something they keep on hand as well. It is just a brilliant meal. Satisfying, no strange ingredients, filling and healthy! What more could you ask for?
Once I had made it for our family I quickly decided to test it out and see if I could make it in individual servings. I’m a busy mama, I need quick lunches. In order for me to stay on plan I need something that is easy. When I’m cooking up chicken sandwiches, chips and veggies for my boys I have got to have something just as simple that I can grab to stay on plan…when I don’t have it on hand I find myself tempted to serve up some mac n cheese instead.
Needless to say I was thrilled that it worked! Lazy Lasagna can easily be made into multiple individual servings, frozen and reheated. It tastes GREAT even if you reheat in the microwave (and I’m usually not a fan of microwaved food!) Here is how I do it!
I start by making 1 ½ recipes. I just find that it’s cheaper per pound to buy ground beef in 3 lb packages so that’s what I do. Here is their recipe with the ingredients adjusted to make 1 ½ recipes (they aren’t all exactly 1.5…I’ve found you don’t quite need that much of some of the spices but then on others I double them for example).
Insider Info: I have a Wolfgang Puck Food Processor that I love and use for many THM recipes and just cooking in general, plus it is better than anything I’ve ever used for crushing ice. That was a random side note. You don’t need crushed ice. Lol that’s what I use that to blend up the cheese mixture.
The original recipe will make 10-12 mini loaf pans. This recipe made 18 today. 14 were what I would call hearty servings and 4 were light servings. That just means as I got to the end I put in a little less for days when I’m planning to have a salad with it. Today I was actually out of spinach so you won’t see it in the pictures but when this happens I simply heat up some spinach and put the lasagna over the top of it for my lunch. Tastes the same!
The biggest question I get is, “Do you bake them before you freeze them?” The answer is yes! I bake them fully, let them fully cool then I cover them with the lid they came with or a small piece of foil and pop them in the freezer. Do not put them into the freezer piping hot. It’ll not only ruin the lasagnas but it could also mess up your freezer system.
They pop out easily once they are frozen. Simply remove them from the foil onto the plate to reheat!
Once they are frozen you can take them with you to work like my brother-in-law (teacher) and husband (minister) do or you can be like me and simply pop one out when you’re ready to avoid that mac-n-cheese that you’re serving your littles. However you do it, just enjoy it! It’s simple, it’s freezable, it’s on plan and it is delicious!!
Individual Servings of Trim Healthy Mama Lazy Lasagna
- Prep Time: 30 Minutes
- Cook Time: 20 Minutes
- Total Time: 50 minutes
- Yield: 18 Mini Loaf Pans 1x
- 3 pounds Ground Beef
- 3 jars Spaghetti Sauce (no sugar added brands)
- 2 Tbsp Dried Oregano
- 3/4 Tsp Mineral Salt
- 2 Tsp Onion Powder
- 2 Tsp Garlic Powder
- 1/8 Tsp Cayenne Pepper
- 1 Pkg Frozen Spinach (Thawed)
- 1 1/2 Pkg Cream Cheese
- 21 Ounces Cottage Cheese
- 3 Large Eggs
- 16 Ounces Mozzarella
- 1/2 Cup Grated Parmesan (Fresh is best. For the top.)
- I make everything the same way they recommend…I brown the meat, drain it, add the spices and the spaghetti sauces and let it simmer while I get everything else together.
- I thaw the spinach and squish out as much water as I possibly can between two paper towels. Ok, I probably end up using 10 paper towels for this. Lol Just get the water out. That is your mission.
- Blend the cream cheese, eggs & cottage cheese with freshly cracked black pepper…just because I love freshly cracked black pepper. If the thought of cottage cheese stopped you in your tracks, keep cooking mama, you won’t even notice it. I’m super picky and I hate cottage cheese, I promise, you won’t know it’s in there. Blend those ingredients until smooth.
- Now, it’s time to assemble but this time instead of putting it into a large baking dish you’re going to put it into mini loaf pans that you’ve sprayed with coconut oil spray. You can get them anywhere, sometimes with lids, sometimes without, either will do. Some like to wash and reuse them, you certainly can as this will pop right out but they’re pretty cheap so I just tend to buy new.
- I do two rounds of layering so it looks like this in each little loaf pan:
Meat Sauce (cover the bottom…one serving spoon full will do)
Cottage Cheese Blend (3/4 serving spoon full)
Mozzarella Cheese (sprinkle…form a layer but not a thick layer)
Then I sprinkle Parmesan Cheese on top
- That’s it! So simple. I bake them all at once at 400 for 20 minutes. If some don’t brown nicely (often the ones at the front don’t in my oven) I leave those in and broil them for a minute or two until nicely browned on top.
- Once they have fully baked and are completely cooled, cover them and freeze them. When you’re ready to eat them take one out of the freezer. Pop it out of the foil. They pop out easily once they are frozen. Simply remove them from the foil onto the plate to reheat! I heat them for 4 minutes in my microwave. Enjoy!
