Instant Pot White Bean Parmesan Soup

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 6 cloves of minced garlic
  • 6 cups vegetable broth
  • 1 can diced tomatoes, drained
  • 1 teaspoon sugar
  • ¾ cup fresh grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 cans cannellini beans, drained and rinsed
  • 6 oz chopped spinach

Instructions

  1. Set Instant Pot to saute and when it says HOT, add olive oil, onion, and garlic.
  2. Stir until onion is translucent.
  3. Add broth, tomatoes, sugar, cheese, Italian seasoning, salt, pepper, beans, and spinach.
  4. Lock lid and set vent to sealing.
  5. Set Instant Pot to Manual (or Soup) for 5 minutes.
  6. When Instant Pot beeps, release the pressure and remove lid.
  7. Stir and serve.
