For years, I’ve heard people talk about serving Corned Beef and Cabbage as a traditional meal for New Year’s Day and Saint Patrick’s Day. And I’ve always felt like I’ve been missing out on something really cool and wished I had planned better. I’m not of Irish descent, but something about this dish seems fanciful and festive and I do love new traditions. As we approach New Years Day or Saint Patrick’s Day lots of people are asking how to cook a corned beef in the Instant Pot – can it even be done? And the answer is a resounding yes! Just look at how this turned out:

Image: How to cook corned beef in an Instant Pot: The finished dish without cabbage.

Of course, I didn’t have any idea how to even cook a corned beef, so I found someone who has Irish roots and Instant Pot know-how — and asked her to re-create the recipe for me using her Instant Pot. The result is a scrumptious recipe for how to cook Corned Beef in the Instant Pot complete with cabbage and potatoes and carrots.

In researching I discovered that there is some controversy about the origins of the Corned Beef and Cabbage meal and not everyone serves it on both holidays. The best I can tell is what I found on Wikipedia, which is that Irish immigrants to the United States began substituting corned beef for back bacon when making a traditional Irish dish (bacon and cabbage), thereby creating corned beef and cabbage.

Do you love corned beef and cabbage? Try this instant pot recipe for the New Year, St. Patrick's, or any day of the year.

My thought on the whole thing — any excuse to get tasty, home-cooked holiday comfort food and make family traditions is a good reason. There is almost nothing I like more than some meat and tasty root vegetables cooked in a pot! If you are one of those people who agree with me – than we came up with this recipe for how to cook corned beef in the Instant Pot just for you.

Image: How to cook corned beef in an Instant Pot: The brine.

You should know that you are going to need to brine the brisket at least overnight and up to one week. So don’t wait until the day of to buy your brisket. When you put everything into the Instant Pot, you only need to add one cup of the original brine. I recommend starting the liquid on sauté while you chop the vegetables so that your pot is already steaming when you seal it. This will bring it up to full pressure more quickly once you get everything in the pot and switch it to pressure cook. Doesn’t this look pretty in the pot?

The cabbage will turn white during the cooking process, which is why it is not pictured in any of the finished plated recipe pictures. It just wasn’t showing up well for the camera, but is quite tasty and adds important flavor to the dish. I love the flavor cabbage adds! If you decide to try our method for how to cook corned beef in the Instant Pot we would love it if you would comment below and let us know how much you love this recipe!

Could you please change the font color in the recipe. It is so light in color that one can barely read it. If you can change the font perhaps make the background dark. Thanks!

Oh, this sounds good. I thought about making our corned beef and cabbage in the Instant Pot last year but wasn’t sure how it would turn out. I like the idea of brining our own brisket and will plan ahead and give this a try this year.

See these pretty little plants playing peekaboo? I See these pretty little plants playing peekaboo? I thought they were goners. See, my sister gave us the bulbs for Asiatic Lillies for Christmas last year, down in a bag full of dirt and told us to take them home and plant them in the cold so they would rest and come back next year. Or freeze them. I did neither. I knew we weren’t in our own home yet, and we were hoping to move into our forever home this summer, so I threw them in the closet and waited. They stayed dormant, and started to develop roots in the Spring, still in the bag in my closet. Come June 5, we moved into our new house, and I pulled out the bag around June 15 to plant them and found that the roots were turning to mush. The bulbs were starting to rot. I planted them anyway, but to make matters worse, I accidentally planted them upside down because I thought the roots were actually sprouts. Oops. Then, I hired my boys and their friends to weed the bed where these are planted and forgot to tell them to leave these alone. The “sprouts” disappeared. I thought they were gone forever. Here it is the middle of August, and a week or so ago, I found these baby Asiatic Lillies coming up. I texted a pic to my sis to ask if this was what they look like. Sure enough after all that trauma, this gift survived. I won’t have blooms this year, but I’m told they will come back next year and survive to bloom. What a sweet blessing that will be, God willing. And a sweet reminder to persevere under trials and hardship. God is doing something bigger, something hidden, something better than we can ever imagine. Hang in there! #momlife #momfierce #momforthewin #firmlyplanted
Today I’ve been sorting through some heavy stuff Today I’ve been sorting through some heavy stuff, especially the unmasking of pedophilia and it’s prominence in the US and in our backyards. This horrifies and frightens me. I am so grateful to know that God will prevail. In the end, He wins. Everything seems so dark here in the US and it’s because of the spiritual forces of evil — but I know God will prevail. His love never fails. First #sheisloved campaign with @mercyhouseglobal and sheispriceless.org - check that out it’s important. Second - that cute bracelet came from @mercyhouseglobal about a month ago and *didn’t fit*. Today it’s loose enough to twist. I haven’t lost a lot of pounds according to the scale — I kinda stalled out three or four weeks ago at 17 pounds lost — but apparently I’m losing fat. That’s a victory. Third, my hands look like my moms and will some day look like my grandmas. I consider that a blessing.
