How to Make an Out of This World Breakfast Panini

Let’s just say your children just happen to notice the Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancakes and are already super excited to celebrate the upcoming movie release on December 15th in super special ways. You’re reading this post, so you’ll already know that Eggo waffles and pancakes now have no artificial flavors and colors from natural sources. You’ll also be a hero – because you will already have this recipe for Out of This World Breakfast Paninis up your sleeve – and you’ll have an ibotta® coupon too!

If you have Star Wars fans in your house, breakfast will be especially exciting about Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancakes. Each box features six different Star Wars designs! They are a fun way to celebrate all things Star Wars.

My boys already knew what we were getting when we got to Walmart, and of course they all three wanted to push the cart – so they all three lined up in a row and navigated us over to the frozen foods section. It didn’t take us long to find the frozen breakfast foods section because — these men were on a mission! While there we also grabbed our other necessary ingredients for our (afternoon) breakfast panini: eggs, sliced cheddar cheese, and bacon. Who gets up in time to make panini sandwiches for breakfast? Not me! But we love these flavors any time of day. Doesn’t that look tasty?

The directions for this sandwich are really, really simple. A couple things need precooked. I like to cook bacon in the oven on a cookie sheet – fill the cookie sheet and bake on 400 for about 30 minutes. Or – if you are just making one sandwich you can place the bacon between two paper towels, on a plate, and microwave for one minute per bacon slice. Perfect bacon! What would be really awesome is if you went ahead and made bacon for the whole week and set it up in the refrigerator in a zipper bag.

Eggs will also need pre-cooked. You can put your eggs two at a time into a ceramic cereal bowl, break the yolks and microwave them for 1.5 minutes to get the perfect sized egg for your sandwich. Eggs can also be prepared ahead for the week and stored in a zipper bag for easy use. While you are getting those ingredients ready, go ahead and plugin your panini press and get it pre-heated so you are ready to go!

Now comes the fun part. With your panini press fully pre-heated, place the first Eggo Buttermilk Pancake face down on the bottom plate. (This is important! You want those cool characters to show at the end.) Then layer egg, bacon (lots of bacon) and the cheese. Add a second Eggo Buttermilk Pancake face up. Close the panini press and wait for the time designated in your manual. Mine was done in about five minutes.

Let me tell you – these sandwiches were good! the aged Vermont cheddar, two eggs, and extra bacon were a perfect pairing with the Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancakes. This sandwich is going to make the perfect opening day celebration!!! We’ll probably have them for a late brunch right before my family heads to the first available matinee. And yes, we already have our tickets.

  • 2 Kellogg’s® Eggo® Star Wars Galaxy Adventure™ Buttermilk Pancakes
  • 4 Slices bacon (Pre-Cooked in microwave for four minutes)
  • 2 Large Eggs (Pre-cooked in microwave for 1.5 minutes)
  • 1 Slice Aged White Cheddar

Instructions

  1. Place the bacon between two paper towels, on a plate, and microwave for one minute per bacon slice. To cook in bulk, place on a cookie sheet and bake a full cookie sheet at 400º for 30 minutes.
  2. Plugin your panini press and get it pre-heating.
  3. Pre-cook the eggs. Put your eggs two at a time into a ceramic cereal bowl, break the yolks and microwave them for 1.5 minutes to get the perfect-sized egg for your sandwich.
  4. Place the first Eggo Buttermilk Pancake face down on the bottom plate.
  5. Layer egg, bacon (lots of bacon) and the cheese.
  6. Add a second Eggo Buttermilk Pancake face up.
  7. Close the panini press and wait for the time designated in your manual. Usually 5-8 minutes.
