I didn’t even know until recently that Instant Pot cake recipes for regular cakes were a thing! I mean, I love my cheesecakes in the Instant Pot, and I certainly have enjoyed several different custards in the IP, and for sure bread pudding and rice pudding and brûlée and lots of other recipes work in the IP. But cakes? Wow. This is a game changer – now cakes don’t have to heat up my kitchen! I’m so excited about this pumpkin cake for Instant Pot you guys!

So how many of you love pumpkin? I’ve got a pretty decent collection of pumpkin recipes on the site, because I’m a pretty big fan of pumpkin cake, pumpkin cookies, pumpkin bread, and all that. I do.not.like. pumpkin pie. I know! Isn’t that so odd? I’m just not a fan of the texture of pumpkin pie at all. But give me a pumpkin cake with caramel drizzle like this one and I am on it!

Pumpkin Cake for Instant Pot is the *perfect* dessert recipe to add to your Thanksgiving celebrations for those of us who do not enjoy pumpkin pie but want to enjoy the seasonal flavors. It is a very straightforward recipe using the pot-in-pot method for pressure cooking, which simply means you put your pumpkin cake down into a round cake pan that then goes down into your pressure cooker liner on top of the trivet.

The result is that you can still put some water down in the bottom of the Instant Pot liner, under the trivet and get the steam you need to pressure cook Instant Pot cake recipes, without getting your cakes wet!

How to serve our Pumpkin Cake for Instant Pot

This pumpkin cake is a dense, moist, satisfying cake perfect for fall and the holidays. Serve it warm with ice cream or whipped cream for extra flair, or serve it plain – it doesn’t even need the caramel! Or if you like chocolate, oh my goodness chocolate syrup and pumpkin cake pair really well too.

Best Pumpkin Cake for Instant Pot

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 1/2 teaspoons pumpkin spice blend
  • 1/2 teaspoon salt
  • 1 cup pumpkin
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/3 cup butter
  • 3/4 cup sugar

Instructions

  1. In a large bowl, combine butter and sugar. Mix until light-colored, about 2 minutes.
  2. Add the pumpkin, egg, and vanilla extract, and mix until well-combined.
  3. Make a well in the center and stir together the flour, baking soda, baking powder, salt, and pumpkin spice blend. Using a wooden spoon, mix with the wet batter until just combined.
  4. Place two pieces of paper towel on the bottom outside of a 6″ springform pan and then seal with tinfoil. Grease the inside of the pan and then fill with batter.
  5. Place 1/2 cup of water in the IP and place your trivet in the IP.
  6. Put the pan over the top of the trivet and secure the lid.
  7. Bake at manual for 60 minutes, and then natural release for 5 minutes.

See these pretty little plants playing peekaboo? I See these pretty little plants playing peekaboo? I thought they were goners. See, my sister gave us the bulbs for Asiatic Lillies for Christmas last year, down in a bag full of dirt and told us to take them home and plant them in the cold so they would rest and come back next year. Or freeze them. I did neither. I knew we weren’t in our own home yet, and we were hoping to move into our forever home this summer, so I threw them in the closet and waited. They stayed dormant, and started to develop roots in the Spring, still in the bag in my closet. Come June 5, we moved into our new house, and I pulled out the bag around June 15 to plant them and found that the roots were turning to mush. The bulbs were starting to rot. I planted them anyway, but to make matters worse, I accidentally planted them upside down because I thought the roots were actually sprouts. Oops. Then, I hired my boys and their friends to weed the bed where these are planted and forgot to tell them to leave these alone. The “sprouts” disappeared. I thought they were gone forever. Here it is the middle of August, and a week or so ago, I found these baby Asiatic Lillies coming up. I texted a pic to my sis to ask if this was what they look like. Sure enough after all that trauma, this gift survived. I won’t have blooms this year, but I’m told they will come back next year and survive to bloom. What a sweet blessing that will be, God willing. And a sweet reminder to persevere under trials and hardship. God is doing something bigger, something hidden, something better than we can ever imagine. There are so many things I need to tell you about There are so many things I need to tell you about this picture. First #sheisloved campaign with @mercyhouseglobal and sheispriceless.org - check that out it’s important. Second - that cute bracelet came from @mercyhouseglobal about a month ago and *didn’t fit*. Today it’s loose enough to twist. I haven’t lost a lot of pounds according to the scale — I kinda stalled out three or four weeks ago at 17 pounds lost — but apparently I’m losing fat. That’s a victory. Third, my hands look like my moms and will some day look like my grandmas. I consider that a blessing.  Finally, it’s been a beautiful day😍 but I’m kinda sad it took me this long to find a red marker and share the love.
