Oh my goodness. I just concocted this in my kitchen (inspired from a pizza place who serves this) and it is now my all-time favorite low carb pizza. None of our local pizza places serves this, and I’m sure most of you are in the same boat, so now you can make this at home!! It’s on plan for KETO or THM or Weight Watchers and is just perfect for any low-carb lifestyle.

But the best part…it’s delicious!! My kids asked for seconds. My husband raved.

It looks like pizza. Tastes like pizza. Eats like pizza. It is CHICKEN CRUST PIZZA! Forget trying to turn cauliflower into a crust. This pizza will make your forget that cauliflower pizza crust even existed. Forget trying to find a wrap that’s good enough. This. This is THE KETO Pizza Crust you’ve been looking for and it’s easy to make!!

Follow the steps below to create your own zero carb pizza crust deliciousness!

Take one chicken breast out and season generously with salt and pepper on both sides. Split the breast as if you were stuffing it; this will help the pounding process go faster. Do not cut all the way through to the other side. Lay the chicken flat. I put it on a cutting board and I pound it with a sturdy pot. You can also use a food mallet. Cover with plastic wrap or parchment paper and pound the chicken until it is flat. Your goal is less than ½ inch in thickness.

From here, you will add some magic flavoring. I took 1 tablespoon of minced garlic (I use the jar garlic…so easy), I added it to 1/8 cup olive oil and heated it for just 20 seconds in the microwave. This releases the garlic flavor into the oil. Remove the minced garlic (otherwise it will burn and taste bitter). I used a spoon but you can also strain the oil. Next, brush the crust (chicken) with the garlic oil! It gives it that extra oomph that isn’t blatantly garlic but adds to the depth of flavor.

Heat a skillet on the stove over medium high heat with a little bit of olive oil and butter. Sear the chicken on both sides. I cooked it for 1-2 minutes per side. It’s ok if it’s a little pink in the center because it will finish cooking when you bake it. Thin chicken doesn’t take long to cook through.

Now it’s time to add your favorite pizza toppings! Spread the chicken pizza crust out on a cookie sheet and start loading them up. I started with a low-carb pizza sauce, then I added cheese, black olives, banana peppers, and pepperoni. I always put the cheese on first because I like crispy toppings. Pop it in a 400-degree oven until the cheese is melted, then broil until the pepperoni are crisp.

I cut it into slices just for fun and to see what the kids thought of it without them realizing it wasn’t actual pizza. They didn’t even notice the chicken at first! Once they did, they still wanted seconds. I also ate it with a fork just because it was a little greasy to pick up, but I sometimes eat regular pizza with a fork too. When you cut through with the fork it literally has the same feel as pizza even though it is a chicken pizza crust instead.

Ah. Just amazing!! Enjoy!! You’ll love this. It’s the best low carb pizza crust ever invented. You’re welcome low carb friends!!

  • Low Carb Pizza Sauce
  • Pizza Toppings of Choice
  • Cheese

Instructions

  1. Salt and Pepper Each Chicken Breast.
  2. Pound the chicken until it is flat. Your goal is less than ½ inch in thickness.
  3. Add one tablespoon minced garlic to 1/8 cup olive oil in a glass dish.
  4. Heat it for just 20 seconds in the microwave.
  5. Brush Oil on the Chicken (avoid the garlic)
  6. Heat a skillet on the stove over medium high heat with a little bit of olive oil and butter.
  7. Sear the chicken on both sides, 1-2 minutes per side.
  8. Add your favorite pizza toppings. I like to put the cheese on first for crispy toppings.
  9. Bake in a 400-degree oven until the cheese is melted. Then switch to broil.
  10. Broil until the pepperoni are crisp.
