Plum Jelly in the Microwave

Hot, fresh plum jelly straight from the microwave to your biscuit is quick, easy and yummy! All you need is 1 1/2 pounds of plums, 3/4 Cup of sugar, a bowl, a spoon, a microwave and either a food mill or a fine mesh sieve.

Plum Jelly

Quarter your plums and toss them in the bowl pits, skins and all. Add the sugar. Microwave at full power for 10 minutes. Remove from the microwave and either pass them through the food mill or strain them thoroughly through your sieve. I scrape all but the skin and pits through my sieve, which takes a while. A food mill is better if you can spring for one. Return the strained liquids back to the microwave for 3 minutes. This will make about 1 1/2 pints of jelly, which you can store in jars with lids or in tupperware in your refrigerator.
