These sweet potato tots are so yummy and so easy! As many of you know, I’m a picky Trim Healthy Mama, so while I love love love this plan and the foods we get to eat, I often struggle to get on board with some of the E meal setting veggie options. When it comes to S meals, I am all set. I love a good stir fry of veggies and protein, I could eat my weight in roasted broccoli or cauliflower fried rice and a juicy steak with a Caesar salad was my idea of a family fave long before we even began our THM journey.

E meals, however, stump me. I just prefer the fats to the carbs especially when it comes to vegetables. I also have texture issues and prefer my veggies to be crunchy if they aren’t sautéed in fatty goodness. That’s why I was thrilled when I came up with this quick tater tot alternative!

I also love that I can choose to make a little or a lot. I can make them for myself for lunch or I can make them to go with grilled chicken breast, lean fish or baked turkey breast for dinner for the family. When I’m cooking for myself I just use one medium sweet potato. When I’m cooking for the family I use 2 large sweet potatoes. These are great whether you like sweet potatoes or not! Don’t hesitate to give them a try.

THM Sweet Potato Tot Recipe Tweaks

Here are some tips/tweaks you can make depending on how you want them to turn out. If you want them to be softer use just 2 egg whites per large sweet potato. Using two creates a softer tot, still delicious.  If you want them to be a little sweeter use ½ tsp of garlic instead of the full teaspoon per large sweet potato. You can also add a ½ tsp of THMs super sweet. The cinnamon adds a sweet flavor and that ½ teaspoon goes a long way but feel free to up it to a full teaspoon if you aren’t getting the kick of flavor you want from it.

If you struggle to get your kids to eat good-for-you veggies (or if you struggle to get them down) then this should be a great option for you. I made them again tonight and my four-year old said, “Mom!!! How did you make these?! They so good!” That’s pretty telling! We all know children can be our best critics. I think these are just the perfect balance of savory, sweet, crunchy and soft. Let me know how you like them!

Ingredients

Scale
  • 1 Large Sweet Potato (Peeled and Shredded)
  • 1 Egg White
  • 3/4 Tsp garlic
  • 1 Tsp Minced Onion
  • 1/2 Tsp Ground Cinammon
  • 1 Tsp Pink Himalayan Salt
  • Fresh Cracked Black Pepper (To taste.)

Instructions

  1. Shred the potato. After you shred the potato I like to give it a quick rinse and then pat it dry.
  2. Add all of the ingredients and mix well.
  3. Then drop a tablespoon (I eyeball it) into the cups on a mini muffin pan that you’ve sprayed lightly.
  4. Bake at 400 degrees for 18-20 minutes.
  5. One potato will yield 16-20 mini muffin sized ‘tots.’

    Have you tried freezing these? I would like to make extras and freeze for a later date if possible.

    This didn’t turn out for me at all. I don’t know what I did wrong. I followed the recipe exactly. ☹️

    I shredded these with my peeler. This might be better with a food processor shred and less salt. Mine came out good, but way too salty. Also – mine stuck to the cupcake tins.
