The Family Meal: Sweet Garlic Chicken and Potatoes

I found a recipe online for Garlic Brown Sugar Chicken which sounded yummy. I made a few alterations, added the same mixture to my potatoes, and baked both at the same time. I started this recipe by altering the preparation of garlic because I prefer to Peel Garlic The Easy Way!

Once the garlic was peeled and warm, it needed minced and mixed with olive oil and brown sugar. I thought my Vitamix would be perfect for the job, but alas the recipe did not have enough liquid so the garlic ended up being a bit chunkier then I wanted. I also added salt and pepper to taste. I made enough for 3.5 pounds of meat since that is what I had that needed baked and would fit into my baking dish. (A triple recipe.) Once I had the chicken prepared I started wondering if the same recipe would work well for my potatoes.

So I decided to give it a try and they were a big hit. I just used the exact same mixture for one recipe and spread it over three pounds of sliced organic red potatoes. I added salt and pepper and popped the potatoes in the oven at 500 degrees. After about fifteen minutes, I put the chicken into the oven with the potatoes (in a seperate baking dish) so that they would be ready at the same time.

I then found my Kings Hawaiian Sweet Rolls and a couple cans of green beans to round out our meal. I would prefer to have served this yummy chicken and potatoes with a nice fresh salad and homemade bread but you can only use what you have. In this case I had green beans and packaged bread… The end result was a yummy and satisfying meal for eight with enough leftovers to use the chicken in a casserole or chicken salad the next day.

    Amy, this looks so delicious. I’m a HUGE fan of “garlic”. And it’s good for your immunity, so I cook with it even more in the winter.

    My family could live off of potatoes. We love them all, red, russet, sweet, whatever… breakfast, lunch, and can even make a meal out of them for dinner! Your meal looks amazing! Makes me wish we still ate meat 🙂
