About twelve years ago, we switched my daughter over to a gluten-free diet. One piece of advice a good friend gave me at that time was to focus on what she could have and base as many of our meals off of those things as we could, instead of focusing on what she couldn’t have.

That was the best advice ever, and has led us to many, many fabulous meals without a trace of gluten (also known as bread, wheat, or flour) that the whole family enjoys. If I can combine our need for gluten-free meals with the ease of the Instant Pot I am a very happy mama.

That’s why I’m super excited about this list of 30 days of Gluten Free Instant Pot Meals and a fun free printable menu plan for April.

Working through this list of gluten-free instant pot meals will make meal choices simple, easy, and delicious whether you’ve been gluten-free for days or months. Even better – gluten-free meals are generally better for you because gluten always brings extra carbs to the table. So in my case, laying off of gluten for my daughter has been good for me too!

Each of these gluten-free recipes can be made easily in your Instant Pot, and you can schedule two or three nights a week with these meals or use your Instant Pot every single day for thirty days! No matter which way you roll, gluten-free instant pot meals are a win-win for the whole family.
