Instant Pot Vegetable Beef Soup

When I was little, my mom used lima beans in soups a lot. Especially vegetable soup. We used to try to get away with picking them out and one of my siblings even fed them to the dog on the sly. I’m not even sure the dog found them all that appetizing.

In spite of this horror, comforting soups like this vegetable beef version remain one of my favorite things to this day. If you’re a fan of lima beans, no judgement here! But you’ll have to add them in yourself because you won’t find those little beans in my savory Instant Pot Vegetable Beef Soup!

Lima beans aside, nothing says comfort food quite like a cozy warm bowl of soup complemented by some buttery crusty bread. This Instant Pot Vegetable Beef Soup is just the thing to warm up your family during the cold fall and winter months. It’s a staple in the summertime, too, because of the abundance of fresh produce to choose from.

Grab some super fresh veggies or use up what is looking a little neglected in your fridge to throw together last minute. It’s a versatile, nutrient-packed meal that has incredibly rich flavor. Comfort food at its best!

Back when my mom made this soup for us kids, it would sit on the stove simmering for a while. It’s hard for me to imagine spending all that time in my kitchen anymore, and that’s one of the reasons I’m devoted to my Instant Pot! Twenty-five minutes to whip up this goodness and even less time to clean it all up.

So if it’s dinner time and you haven’t made dinner plans yet, don’t worry! Your family will be shocked (and pleased!) by how fast you’re able to throw together a hearty soup meal. This is a meal to easily add to your regular routine all year long. Grab your Instant Pot and let’s make some Vegetable Beef Soup!

To start with, you will want to sauté the onions, ground beef, and garlic until the ground beef is browned. This adds a nice depth of flavor to both the onions and the beef and forms the base for your Instant Pot Vegetable Beef Soup.

Once you have finished browning the meat, you will need to add the broth and all of your chopped and prepared vegetables to the pot.

Close the lid and make sure the Instant Pot is fully sealed. Turn the vent to pressure. Set the pot for five minutes on manual pressure setting and walk away. When you come back you will have some seriously delicious Instant Pot Vegetable Beef Soup to warm your hearts and tummies!

Ingredients

Scale
  • 1.5 lbs ground beef
  • 1 small onion, diced
  • 1.5 tsp minced garlic
  • 12 oz fresh green beans, trimmed and cut
  • 3–4 medium carrots, sliced
  • 2 ears of corn on the cob, corn cut off cob
  • 4 medium potatoes, peeled and cubed
  • 28 oz petite diced tomatoes
  • 3 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to saute setting.
  2. Add ground beef, onion, and garlic into liner until browned.
  3. Drain if there is too much grease.
  4. Add vegetables, tomatoes, and broth to the Instant Pot.
  5. Apply lid and set vent to sealing.
  6. Press manual option and set time for 5 minutes.
  7. Allow to naturally release for 10 minutes then quick release.
  8. Remove lid, stir, season, and serve.

    I think I would skip the lima beans but the rest of this recipe sounds wonderful.
